Sweetening Up South Salem High: A Student-Run Bakery

Gabi’s Sweets was founded by Gabriella Esposito-Thornton ‘28 on August 21, 2025. She runs this business by herself out of her home, refreshing her menu with innovative treats monthly. 

Esposito-Thornton’s passion for baking started early in her life. Despite pushback from others, she decided to follow her dreams.

Inspiration

“What inspired me to start my business was watching baking shows with my dad. We would always have baking ‘competitions’ and I loved doing that. I started planning Gabi’s Sweets a couple years ago but a few people thought it would do terribly, so I listened. But then my sophomore year I wanted to leave my comfort zone, so I decided to fully pursue my baking business idea and it turned out to be great,” Esposito-Thornton said. 

Seasonal Menus

Gabi’s Sweets is no stranger to a seasonal menu. They featured a halloween menu with themed sweets fitting for the holiday. With being in the middle of the holiday season, the highly anticipated Christmas menu has dropped. The menu has new treats such as cranberry orange bars, peppermint cookies and snowman rice krispy treats. This leaves customers excited for what is to come in the next year.

Expanding her Reach

Since Esposito-Thornton’s business is quickly expanding, she is looking for more ways to promote her business. She aims to find new groups of customers that she can not reach by promoting Gabi’s Sweets through school.

“To expand my business, I am going to start doing more bake sales, and also start promoting more on social media and in person,” Esposito-Thornton said.

Customer Favorites

Keira Flores ‘28 is a loyal customer of Gabi’s Sweets. She was friends with Esposito-Thornton and was familiar with her baking. Flores was one of the first customers to place an order with Gabi’s Sweets.

“I have tried so many items on the menu, but my favorite so far has to be the lemon cake. I am also excited for the Christmas menu during December,” Flores said.

Esposito-Thornton also enjoys her trying her own creations, with a few ranking in her favorites.

“My personal favorites for my business are the sugar cookies, lemon cakes with lemon curd and the apple pie.” Esposito-Thornton said.

Loyalty Rewards

Gabi’s Sweets has reached not only a variety of customers, but many of which have continued to order from her business. To solidify these customers to place future orders, Esposito-Thornton is implementing a card system to keep these customers coming back. 

“For my repeat customers I am working on coming out with a loyalty card, which will give a discount after five orders,” Esposito-Thornton said.
